You have to eat even when you’re travelling, and we all know that can add up to a big chunk of your holiday budget. Being away from home doesn’t mean that meals should be difficult or boring.

Accommodation and eating are usually the two biggest expenses of travel. With a campervan hire, your accommodation is sorted, so all you’ll need to account for is petrol, campground fees, food, and entertainment. We’ve included some easy recipes with ingredients you can pick up from virtually any supermarket in Australia.

Eat well while you’re on the road

Start your day with this tasty and filling treat and you probably won’t need to worry about lunch!

Breakfast in One Pan

  • 6 eggs beaten
  • 4 Chorizo sausages (sliced) or your favourite (pork, chicken, beef) sausages
  • 150g button mushrooms
  • 8 cherry tomatoes
  • Tinned cooked baby potatoes (cut each potato in half)
  • Handful of grated cheese (optional)
  • Sprinkle of chopped chives (optional)

Grease a large frying pan and cook the sliced chorizo sausages. Once the chorizo is cooked add the mushrooms, tomatoes, and baby potatoes, and cook for a minute or two making sure everything gets mixed in well. Next, pour in the eggs and swirl the pan around so the eggs get in between the meat and veg. Add cheese and cook with a lid on (or cover with foil) on a low heat until the heat has set, and the cheese has melted. Slide out onto a plate and slice up. Perfect with toast or on its own.

One Pot Pasta

  • 2 tbsp olive oil
  • 2 garlic cloves (finely chopped)
  • 1 stick celery (finely chopped)
  • 1 carrot (finely chopped)
  • 1 brown onion (finely chopped)
  • 1 tin (400g) diced tomatoes
  • 5L hot water
  • 1 sweet potato, peeled and diced into 1cm cubes
  • 1 1/2 cups of small pasta shapes
  • Parmesan to serve

Heat olive oil in a large saucepan. Add chopped celery, garlic, carrot, and onion. Stir and cook until the onion softens. Add in a tin of chopped tomatoes, water, and sweet potatoes. Cover and cook until the potato is almost tender (roughly 30 minutes). Add in uncooked pasta and cook for a further 11 minutes. Remove from heat, stir, and serve. Add parmesan cheese to taste.
