Breakfast in One Pan
Grease a large frying pan and cook the sliced chorizo sausages. Once the chorizo is cooked add the mushrooms, tomatoes, and baby potatoes, and cook for a minute or two making sure everything gets mixed in well. Next, pour in the eggs and swirl the pan around so the eggs get in between the meat and veg. Add cheese and cook with a lid on (or cover with foil) on a low heat until the heat has set, and the cheese has melted. Slide out onto a plate and slice up. Perfect with toast or on its own.
One Pot Pasta
Heat olive oil in a large saucepan. Add chopped celery, garlic, carrot, and onion. Stir and cook until the onion softens. Add in a tin of chopped tomatoes, water, and sweet potatoes. Cover and cook until the potato is almost tender (roughly 30 minutes). Add in uncooked pasta and cook for a further 11 minutes. Remove from heat, stir, and serve. Add parmesan cheese to taste.
